As much as I love cooking, I find it to be quite therapeutic, I would be blatantly lying if I said that a simple and quick recipe here and there is not a welcomed change of pace. With le hubs thinking any meal without some sort of meat is not actually a meal but rather a snack simple meals aren’t always easy to come by. After a visit to The Misfit (a must try if you visit LA) a few months back all I have heard about were the short rib sliders, so I figured why not make them, and in the slow cooker. Oh yes, I said it, slow cooker as in throw it in and forget about it…literally.
Short Rib Sliders
2 lbs short ribs (we get ours from the local Farmer’s Market)
4 cloves garlic (in my house we really love our garlic so I used 8 cloves)
1 3/4 cup water
Barbecue sauce to preference (I used about 3/4 cup)
1 package slider sized rolls/buns
Power on slow cooker to high.
Cut your onions into large chunks and mince garlic. Set aside.
Season the short ribs with salt and pepper to taste.
Pour water into the bottom of the slow cooker. Layer in short ribs, onion and garlic. Cover with lid and let cook for 4 hours.
Preheat oven to 425 degrees. Remove ribs from slow cooker and place onto foil covered baking sheet. Brush barbecue sauce over both sides of ribs. Cook in oven until sauce is caramelized – about 15 minutes.
Remove from oven. Remove ribs from bone with fork, place atop bun and serve with whatever side you choose. I served with garlic and herb roasted red potatoes.
While this recipe is incredibly simple it is also incredibly tasty. I hope you enjoy!
